Biju Thomas and Allen Lim put their spin on a traditional Cobb Salad by including fruit making this a delicious summer salad.
Cobb Salad
Ingredients
- 4 eggs
- 4 cups greens mixed
- ham, turkey, Swiss, cheddar, etc… sliced meats and cheeses, a slice or two of each per serving
- 2 bananas sliced lengthwise
- 8-12 strawberries sliced
- ½ lemon juice
Dressing
- 2 Tbsp orange marmalade or cherry jam or other jam/preserves
- 1 Tbsp onion chopped
- 1 tsp garlic chopped
- 1 tsp jalapeno chopped
- 1 Tbsp fresh parsley chopped
- ½ cup white or apple cider vinegar
- ½ cup canola oil
Instructions
- To hard boil eggs: Put whole eggs in a small pot and cover with water. Bring to a boil, cover with a lid, and let cook approximately 10 minutes. Remove eggs and rinse in cold water before peeling. If you are not using the eggs immediately, wait to peel them and cut into halves.
- To make the dressing: Place all ingredients except oil in a blender. Turn on motor to a low speed and carefully drizzle in oil until a nice thick consistency is reached. Adjust seasoning with salt, pepper, and a bit of sugar. (Makes enough for at least 8 servings. Keep leftover dressing in the fridge for up to 4 days.)
- Toss greens in a bowl with a squeeze of a lemon juice and a sprinkle of salt.
Notes
Place about 1 cup of greens in centre of each plate. Arrange an equal amount of meat and cheese, egg, and sliced fruit onto each plate of green. Top with dressing.
