Spicy Beef with Pineapple and Mint Salsa
Packed full of flavour the mint shines through with they Cajun heat complimenting it nicely.
Servings: 2
Ingredients
- oil spray
- 500 g sirloin steak excess fat removed, diced
- 2 tsp Cajun spice mix
- 2 cups quick-cook brown rice
- 400 g can red kidney beans in spring water drained, rinsed
- 4 cups baby spinach
Salsa
- 150 g cherry tomatoes halved
- ¼ cup finely chopped fresh mint
- ½ cup canned pineapple pieces juice drained
Instructions
- Heat a non-stick frying pan and spray with oil. When hot add steak and spice mix. Stir-fry until browned and cooked to your liking. Remove from heat. Set aside.
- Cook rice following packet directions then in a large bowl combine rice, beans, spinach and carrot.
- To make salsa, combine salsa ingredients in a small bowl and mix well.
- Serve rice salad topped with beef and with salsa on the side.
