These can be whipped up in just on 10 minutes. Delicious, and packed full of fuel for post-training meals.
Ham and Cheese Burritos
Ingredients
- 3 cups cooked rice or cooked diced potatoes
- 1 cup diced ham
- 1 cup shredded cheddar cheese
- ½ cup prepared salsa
- 1 cup cooked beans
- 4 scrambled eggs (optional)
- 6 large (10-12 inch) whole wheat tortillas
Instructions
- Combine all ingredients except tortillas, adding salt and pepper to taste. Scramble eggs over medium-high heat, if using.
- Warm tortillas one at a time in a dry pan at medium-high heat, flipping after 1-2 minutes. Immediately stuff each with about 1 cup of the filling mixture. Roll tightly, being sure to fold in the short ends first.

Enjoy warm, or wrap and freeze for later.
