Lamb Burgers with Hummus
Packed full of flavour and qwik to prepare, these burgers deliver nutrients with convenience.
Servings: 4
Ingredients
- 150 g green beans or 1 bunch asparagus trimmed
- 300 g baby carrots trimmed, halved length ways
- 500 g lamb steaks sliced
- oil spray
- 2 tsp ground cumin
- 365 g loaf Turkish bread halved horizontally, quartered
- ⅓ cup hummus
- 2 tomatoes sliced
- ½x 450g can no-added-salt sliced beetroot drained
- fresh coriander
Instructions
- Place a large non-stick frying pan over a high heat. Add beans and carrots. Cook for 5 minutes until tender. Set aside.
- Lightly spray lamb with oil and sprinkle with cumin. Stir-fry for 2-3 minutes or until cooked to your liking. Transfer to a plate to rest for 5 minutes.
- Cut carrots and beans to fit bread. Top bread with hummus, vegetables and lamb. Garnish with coriander.
