Apple Cinnamon Muffins
Muffins are a great post training fuel source. Especially when they have fresh fruit as part of the ingredients.

Ingredients
- 1 large apple
- ½ tsp lemon juice
- 2 cups white flour
- 1½ tsp cinnamon
- 3 tsp baking powder
- ¼ cup brown sugar
- 1 cup wholemeal flour
- ¼ cup butter melted
- 2 eggs beaten
- 1¼ cups low-fat milk
Topping
- 3 Tbsp castor sugar mixed with 1 tsp cinnamon
Instructions
- Peel and grate the apple and stir in the lemon juice (this prevents the apple turning brown). Sift the white flour, cinnamon and baking powder into a seperate bowl. Add the sugar and wholemeal flour; combine well. Mix together the butter, eggs and milk, and stir into the flour mixture. Gently combine with the apple, spoon into greased muffin pans and sprinkle the tops with the topping mixture before baking. Bake at 200°C/390°F for 20 minutes.
