Spicy Sausage and Broccolini Pasta
Flavoursome with fresh vegetables and with a touch of spice from the chilli flakes. The pasta provides fuel for your training.

Ingredients
- 250 g dried linguine
- 450 g lean beef sausages
- 1 Tbsp. olive oil
- 3 cloves garlic, crushed
- ¼ tsp dried chili flakes
- 4 cups broccolini or broccoli florets coarsely chopped
- ½ cup frozen peas
- 2 large courgettes, thinly sliced
- ¼ cup grated parmesan, to serve
Instructions
- Cook pasta following packet instructions, until al dente. Drain, reserving ⅔ cup of pasta cooking water.
- Meanwhile, remove sausage meat from casings. In a large non-stick frying pan, heat oil over high. Cook sausage meat, breaking it up with a wooden spoon, for 6-8 minutes, or until browned. Add garlic and chilli flakes, Cook, stirring, for 1 minute.
- Add broccolini, peas and courgette to pan with ⅓ cup of the reserved cooking water. Cook for 3-4 minutes, or until greens are tender, Add pasta to the pan with remaining cooking liquid. Season mixture with cracked black pepper and toss to coat.
- Divide pasta among 4 bowls and serve topped with parmesan.
