Apple and Chicken Curry

The brown rice fuels your workouts with quality protein form the chicken to help with recovery. This meal can be made as spicy as you like it, the apple goes great with chicken.

Ingredients

  • ½ cup brown basmati rice
  • 1 tsp olive oil
  • ½ medium yellow onion chopped
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 8 ounces boneless and skinless chicken breast cut into 1½" cubes
  • kosher salt
  • ground black pepper
  • 1 medium tomato chopped
  • 1 tsp curry powder
  • 1 sweet-tart apple such as Honeycrisp or Sweet Tango, halved, cored, and cut into 1" cubes
  • cup low-sodium chicken broth
  • 2 tbsp well-stirred lite coconut milk
  • 2 cups baby spinach

Instructions

  • Prepare the rice according to package directions.
  • Meanwhile, in a large nonstick skillet, heat the oil over medium heat until shimmering. Cook the onion for 5 minutes, or until tender. Stir in the garlic and ginger, and cook for 1 minute, or until fragrant.
  • Season the chicken generously with salt and pepper. Add to the skillet and cook for 5 minutes, or until golden. Stir in the tomato and curry powder, and cook for 1 minute, or until fragrant. Add the apple, broth, and coconut milk and simmer for 10 minutes, or until the sauce thickens slightly and the chicken is no longer pink. Stir in the spinach until wilted, and season to taste with salt and pepper. Serve the curry over the brown rice.
