Chia, Date and Walnut Fridge Cake

Ingredients

  • 1 ⅓ cups porridge oats
  • cup walnut pieces
  • cup desiccated coconut
  • cup white or black chia seeds
  • 1 tsp ground cinnamon
  • 1 tbsp cocoa powder sifted
  • 2 tsp vanilla extract
  • 425 grams dried dates pitted and chopped
  • 1 tsp icing sugar to dust

Instructions

  • Lina a 20cm square cake tin with clingfilm. In a food processor, blitz oats, walnuts, coconut, chia seeds, cinnamon, cocoa powder and vanilla extract to a powder.
  • With the motor running, add the dates, a few pieces at a time. Continue to process until the mixture starts to come together.
  • With clean hands, bring the mixture together completely (add 1-2 teaspoons cold water if it's still a little crumbly), then press it evenly into the tin.
    Press down firmly with the back of a spoon to smooth the surface, then cover and chill for at least 30 minutes until firm.
  • Dust the cake with icing sugar, then lift out of the tin and cut into 16 slices. The cake will keep covered on the fridge, for up to 2 weeks.
