Spiced Apple and Date Cup Pudding
This was a great way to use up left over apples. A nice touch of flavour from the spice, and complimented with a scoop of ice cream.

Ingredients
- 2½ tbsp self-rising flour
- ¼ tsp cinnamon
- pinch ground nutmeg
- 2 tsp oat bran
- 1 date chopped
- ¼ green apple grated
- 1 tsp castor sugar
- 2 tbsp trim milk
- 1 egg
- 1 tsp reduced-fat spread melted
- icing sugar to dust
Instructions
- In a medium bowl, sift flour and spices. Stir through oat bran, date, apple and sugar.
- In a separate small bowl, whisk milk, egg and spread. Add wet ingredients to dry ingredients and stir with a fork until just combined. Be careful not to overmix or cooked pudding will be tough.
- Spoon mixture into a mug and transfer to microwave. Cook on high for 70-90 seconds or until pudding rises and top just sets. Avoid overcooking.
- Dust pudding with icing sugar and serve immediately.
