Whipped up so qwikly on a Saturday night. This hit the spot of a dessert, when no dessert had been planned.
Coconut-Vanilla Minute Mug Cake
Ingredients
BASE
- 1 tsp virgin coconut oil
- ¼ cup almond meal
- 1 egg
- 2 tbsp honey
- ¼ tsp baking powder
COCONUT-VANILLA
- 2 tbsp shredded coconut
- ½ tsp vanilla
Instructions
- Put the coconut oil in a microwave-safe mug and microwave just until melted, about 20 seconds. Add the almond meal, egg, honey, baking powder, and stir to combine
- Stir in the ingredients for your favorite flavor: Coconut-Vanilla
- Microwave on high for 90 seconds. Let cool for 5 minutes. Devour with a spoon ight out of the mug.
