Tzatziki
Fresh and easy to make, would have complimented last weeks Falafel salad nicely.
Servings: 4
Ingredients
- 1 small cucumber
- 1 garlic clove
- ¼ cup roughly chopped fresh dill or mint
- 1 cup thick natural unsweetened yoghurt
- 1 tbsp olive oil
Instructions
- Grate the cucumber and place it in the center of a clean towel inside a colander. Wrap up the towel and, over the sink, squeeze out as much liquid as you can.
- Transfer the cucumber to a bowl. Mince the garlic. Add the herbs to the bowl, along with the yoghurt and olive oil.
- Mix well, and season to taste with salt and pepper.
