Bison with Spice Rub
Spicy and delicious .... pure and simple.

- 2 pounds bison or beef hanging tender
- 1 tbsp brown sugar
- 1 tsp coarse salt
- 2 tsp curry powder
- 1 tsp ground cardamom
- 1 tsp coarse-ground black pepper
Trim meat of excess fat. Combine remaining ingredients in a small bowl and rub thoroughly over all sides of the meat. Let rest for at least 1 hour or overnight in frigde.
Bring a lightly oiled sauté pan to high heat. Sear meat on all sides; the sugar in the spice mixture will produce a nice crust.
Either finish cooking in the pan to desired doneness or place pan (check that it's ovenproof) in an oven heated to 400 degrees. Total cooking time will vary but shouldn't take more than 12-15 minutes.
Let steak rest for 3-5 minutes before being cut. Slice thinly against the grain/ Serve with polenta, potatoes, rice or salad.
TIP:
Once meat is rubbed in the spice mixture, you can keep it refrigerated for up to 3 days.
