Coconut-Vanilla Minute Mug Cake

Whipped up so qwikly on a Saturday night. This hit the spot of a dessert, when no dessert had been planned.

Ingredients

BASE

  • 1 tsp virgin coconut oil
  • ¼ cup almond meal
  • 1 egg
  • 2 tbsp honey
  • ¼ tsp baking powder

COCONUT-VANILLA

  • 2 tbsp shredded coconut
  • ½ tsp vanilla

Instructions

  • Put the coconut oil in a microwave-safe mug and microwave just until melted, about 20 seconds. Add the almond meal, egg, honey, baking powder, and stir to combine
  • Stir in the ingredients for your favorite flavor: Coconut-Vanilla
  • Microwave on high for 90 seconds. Let cool for 5 minutes. Devour with a spoon ight out of the mug.
