Creamy Cauli Mash
Nice and creamy, will go well with a stew.

- 1 cauliflower the whiter the better
- 3 tbsp butter
- 1 egg yolk optional
Bring a pot of salted water to the boil. Cur the cauliflower into florets, add to the pot and simmer for 8-12 minutes, until tender. You could also steam your cauli in a steamer for 12-15 minutes or as directed by your machine.
Tip into a colander to drain, then place the colander over the empty pot and allow the steam to evaporate for a minute or two - this will help dry the cauli out and male a stiffer mash.
Transfer the cauliflower to a food processor or blender. Add the butter and the egg yolk (if using) and blend until you have a smooth mash. Season to taste with salt and freshly ground black pepper.
Variation: Stir some chopped herbs like parsley or chives through the mash if you like. Folding though some wholegrain mustard works really well too.
